[ Recipe ] Baby Greens and Avocado Frittata

When the summer is just around the corner, it always gets me wanting to eat healthier. For brunch today, I attempted to make a frittata with avocado and baby vegetables. Similar to an omelette, it makes a great way to start your day! 


 What we will need is the following: 

  • One ripe avocado
  • 3 eggs
  • A splash of milk
  • 2 handfuls of baby greens
  • Salt and pepper to taste
CHOP CHOP CHOP
CLEAN CLEAN CLEAN


1) With your pan/pot on medium-high heat, add a bit of oil and put all your greens in until half cooked.
2) Pour in eggs with milk and stir
3) Wait for the sides to cook and turn to low-medium heat
4) Cover and wait for the top to be fully cooked

BAM.

Put your ripe avocado slices on top.

DONE!



I had much difficulty getting it out of my pathetically high pot so.... 
that is why this photo doesn't show the entire dish. 
You could also add baby tomatoes and some onions to get your servings of vegetables in!
